Life Update: March & April

It’s been a while since we chatted, so I figured I should update you on what’s happening behind the blog! Prepare for a ramble! (Note: I actually started writing this post on March 17… and then again on April 2. Oops).
The meeting that I had at the beginning of March went well… it was actually my interview for my district minister’s license. So, starting in April, you can officially call me Pastor! After getting my district license, I’ll have so many years to complete my classes and work as a pastor until I move toward ordination. It’s so crazy to think about how I ended up here. If you had told me even two years ago that I would be taking this path, the path of full-time ministry, I probably would have laughed in your face.
Speaking of which, I cannot believe that I have been at my job for a year (it was a year on March 18). If I am being completely honest, this is definitely the most difficult job I have ever had, but I know that it is exactly where I am supposed to be. That week was really bittersweet because it was also a year since we lost Pastor D. Looking back over the last 12 months is a bit overwhelming. There has been so much change! Some of it has been really hard and some of it has been incredible…either way, God is in control.
I have not had a lot of time to just sit down and reflect on all of this until recently. Yes, we are still grieving this loss, but God has been so faithful to us! He has revealed Himself, even in the midst of tragic circumstances. I cannot even wrap my head around how much He has carried me through in the last year. Even in the moments of doubt (and there have been a few!), He shows up.
So, though it was a tough first year, I have also been very blessed. The song It Is Well has come up so many times throughout this year and our lead pastor mentioned it in her sermon on the 20 (which was the anniversary of D’s death). Not gonna lie, I had a few “moments” on that Sunday.
In other news, Farmer Ben and I took a vacation a couple of weeks ago and it was awesome. We got to spend time with the family, including this cute little lady!
She looks so much like my sister it’s crazy! (And said sister would kill me if she knew I posted this. Ha!)
We also drove around the finger lakes, ate way too much and I did something a little wild (for me)….
I got my nose pierced! My sister and I decided to do it together. She even caught my blood, that’s a good sister! Bahaha!
I also got to show Ben the sites and all of the places I hung out as a kid, including the ice skating rink. I have so many amazing memories there! We didn’t have much time to actually go skating because of the hockey schedule, but it was nice to show Ben some of my past.
Side note: I JUST now noticed the hockey player falling in the background!
In other news, we moved! We were renting a cute little house just outside of town but we just moved into a house that’s about 1/2 mile from the church. Not gonna lie, I will definitely miss our sunny little kitchen in the mini-house.
We are currently in the midst of finishing up renovations/painting/cleaning but we have all of our belongings in one place now and even have a lot of them unpacked!
While I am a little sad to be leaving our old place, it was the perfect time to move on. I loved our mini-house but it was just a hair too small and we were starting to feel it (note to self: one closet for two people is rough!). I am most excited about having an office and a guest room. I am on the hunt for the perfect desk.
This month has been full of lots of fun things besides the move. I was very excited when I got to spend a few hours with some of my favorite people from high school. Two of them were in town visiting so we randomly got together for lunch and coffee.
Ben and I also spent some time at our friends’ maple farm to help them out with an event and eat copious amounts of maple syrup/drink lots of sap water coffee. It was rough. We even got to go for a ride!
In other news, I started doing an online bootcamp with Erica House. We are doing a carb-cycling program, complete with workouts. So far, I am really loving it, especially the accountability. With my schedule, it is all too easy for me to put off doing a workout, so this is great motivation.
I’ve followed Erica’s blog for a long time so when she opened up the program I knew it would be a great fit for me! She even sent each person a sweet journal and water bottle.
I’m a week into it and so far I am feeling pretty good. It definitely doesn’t feel like a diet and I am loving the motivation to get out and get some exercise!
Phew! I think that’s pretty much it! So, long story short, Farmer Ben and I have been busy!

I have an event tomorrow and then hopefully I’ll have some time to unpack/clean/paint. Very exciting, I know!

Happy Friday! Not gonna lie, it’s been a while! Let’s catch up!
I finally crossed over to the dark side and got an iPhone a couple of weeks ago. In all honesty, I had been thinking about it for a while (since August/September) but my poor old phone was finally on its last legs, so I gave in and made the switch.
Anyway, I thought it would be fun to show you some pictures I’ve taken in the 2 weeks since switching phones. I have to say, the camera on this phone is WAY better than my old one and I LOVE that. I also love that I can take screen shots(as you’ll notice!)…I know… I’m like 2341343 years late to the screenshot party. It’s fine.

Life Update: What Day Is It?

The truth is that I am exhausted. The last month has been a total whirlwind and most days I am not entirely sure which way is up. If I don’t write something down, I don’t remember it.
As an example, about two weeks ago (Maybe?) I had a meeting on a Monday and didn’t realize that I had completely forgotten about it and not shown up until Thursday. Oops. Luckily, I was able to reschedule.
I’ve been so busy that I didn’t post anything on Instagram for 3 WEEKS! If you know me, you know that I typically post about once a day!
Also, the blog turned 4 years old a couple of weeks ago! I had been thinking of doing a sappy throwback post with a lot of fanfare…and then I completely missed it… so thank you to everyone who keeps reading! Moving on…
In other news, Ben and I are adjusting to a new schedule as he started a new job a few weeks ago and I am still trying to figure out balancing schoolwork and adulting. Most days, I am usually up until about 2 am doing homework. Needless to say, this month has required a lot of prayer, patience and coffee (mostly on Farmer Ben’s part-#besthubsever).
But even with all of the hustle and bustle and adulting failure, life is good and Ben and I have so much to be thankful for.
Life is SO good!
Ben and I took a quick trip down to see the family for Thanksgiving. (We drove down Wednesday after work and drove back on Thursday night). Yes, it was a lot of driving but Farmer Ben is probably the best car dancer road trip partner on the planet so we had a blast.
I spent a large portion of the trip scanning radio stations (I know, I’m incredibly behind the times) so I could belt out Adele’s “Hello” while speeding down the highway, eating Trader Joe’s chocolate almonds and drinking coffee like a champ!
The highlight of our trip was going to Wegmans on Thanksgiving day and completely blowing our grocery budget on beer and cheese buying some awesome foodie things that we may not be able to get at home.
Just kidding! While this beer and Wegmans brie are both wonderful treats, it was even better to spend time with the family….especially because I finally got to meet my beautiful niece! Her name is Olivia and she is perfect!
She already looks so much like my sister! (Side note: Can we talk about how good my sister looks after delivering a human baby three weeks ago?!) It’s crazy….strong genes! It was awesome to see the rest of the family as well… I always hate to leave!
Since being home, I’ve been going pretty much nonstop but I am thankful that I am able to do what I do.
Phew… this was an incredibly random post! I had something much deeper planned when I first started typing and…well, clearly that didn’t happen. Next time friends!

(Food) Scenes from a Christmas Weekend

Hope you had a lovely holiday… I know that I did, in spite of still having this pesky cough! I didn’t capture a lot of photos…
Here’s a quick recap:
We continued our tradition of Chinese food on Christmas Eve paired with some wine (thanks Uncle Mike & Aunt Terry!)
The Christmas day menu was as follows: delicious leg of lamb, along with spanakopita, tabouleh, a marinated mushroom salad and a roasted root vegetable soup on Christmas Day. Basically, we ate all day long…which is totally fine! Unfortunately, I wasn’t feeling up to baking so we didn’t have any desserts other than a few cookies (thanks Ben & Ashley!) and some chocolate. And that was really okay with us.
Even though I was really missing the family this year, it was really nice to sleep in and just relax—I ended up reading a book and a half (the half a book being really long!) and sipping on hot toddies for the long weekend.
Other than some major relaxing, we went to see Into the Woods with a couple of friends. Who knew Chris Pine could sing?!
On Saturday, we drove over to Burlington to pick up a few essentials (like siggi’s and coffee) and skipped over to Trader Joe’s… I LOVE that store.
We also discovered a new pizza place which was delicious…and we may have eaten all but two slices of the pie on the drive back across the lake… Whoops!
I made a batch of almond butter and a chocolate peanut butter (sweetened with stevia) in the ninja. Note to self: Next time either soak or roast the almonds first.
Sunday was spent doing a lot of running around and church. Not gonna lie, it felt like a long day.
Monday we had small group and wound up at the bowling alley. Have I ever discussed my bowling skills? Yeah, I don’t have any. My friend Ashley tried bowling with her left hand and ended up tossing the ball into the next lane… it was probably the funniest thing I have seen in 2014!
Tuesday, I started my morning at the DMV…after work I went home and went to bed early!
And here we are on Wednesday…At the moment, we don’t have any plans for New Year’s Eve… which is okay. Ben is working for part of the evening… we will probably pick up some wine and snacks and call it all good! I’m hoping this cough goes away.. It is so last year!

Just popping in with a quick life update!
It has been a crazy couple of weeks around here and Farmer Ben and I were so thankful to both be off on Labor day! What is it about sleeping in that makes the world so much easier to take on???
Do you know what I mean???
Anyway… Here is a list of “currently…”
On the running front: After a lot of soul searching, I decided to drop down to the half for the Wineglass Marathon…. Training wasn’t going well and I was panicking about my long runs…I’d only gotten up to 14 miles and that was rough. In the end, I decided I would rather run the half for fun than try to run the full marathon hating my life and possibly injuring myself.
Because of this decision and a twist of fate, Farmer Ben and I are running the Adirondack Ragnar Relay this year! We can’t wait!
I have to say, it is a relief to just go out and run, rather than worry about hitting a certain distance. Last night, Farmer Ben and I ran a speedy 4.5 miles (that almost killed me) and it was so nice to not worry about going too fast or having to hit a certain distance.
Don’t get me wrong, I love distance running. I do… It’s just that right now, it isn’t working with everything else. And I have to accept that for the time being and do what is best for me.
On the migraine front: I haven’t talked about my migraines in a long time. Long story short, I tried cutting out a lot of different things (caffeine, sugar, alcohol, gluten, dairy, etc) and nothing seemed to work. I finally decided to go off the pill as a last resort. It’s still a bit early to tell, but it seems to have helped. I haven’t had a migraine in two months!
On the food front: I’ve been eating in a hurry lately. As a result, I’ve been tired, sluggish and hungry…and my pants are a bit more snug than I’d prefer, but I’m not too stressed. It just means it is time to get back to meal prep and getting up early enough to make breakfast and lunch. I’m also back to logging on myfitnesspal for accountability (username nre820).
Something that seems to help is Skoop B-strong. I’ve been using it for the last few weeks and I LOVE it for a quick breakfast/snack. Not only does it keep me full, but it is also 100% organic and is SO GOOD for you! I’ll be doing a full review later this week.
On the book front: I finally read The Fault in Our Stars. Verdict: I loved it but I totally guessed how it would end… So sad. Now I have to watch the movie!
I also read Divergent (after seeing the movie). I really liked it… But did anyone else think that Four looked way older in the movie than he was described in the book? I was a little creeped out by this before I read the book.
Lastly, I started reading this a couple of weeks ago (before getting sucked into the other two books)!
I am picking it back up tonight. Thoughts so far: I’m geeking out over the scientific stuff but some of it feels too gimmicky, like they are trying too hard to sell it to the reader. I’ll keep you posted on my final thoughts.
Can I just say that I love the library???
In other news: Farmer Ben and I started our first batch of homemade vanilla extract. I cannot wait to try it! Six weeks feels like forever.
We’ve been obsessed with tintos (tinto de verano). So simple and so refreshing! Half red wine, half orange/lemon soda (I love the blood orange variety in the picture) over ice.

Can you believe February is over?
I realize that things have been a little quiet on the blog as of late, but I can assure you that I’ve been running, eating delicious things, spilling stuff on myself and being a weirdo, per usual.
I’ve spent the last two weeks doing some major race planning items. I had a planning meeting last Friday and pestered a bunch of local businesses whenever I had any free time…Seriously, I glanced at the list I have and it appears that we have already contacted over 130 businesses…. not too shabby for January and February!
I also got the official word that Clif will be sending us some sample size bars for the race! That will be in addition to a ton of other goodies we’ll be getting…. I’m so excited about this, I can barely handle it!
In other news, I am absolutely loving my new running shoes. I’m sad because they’ve gotten a little dirty with all of the mud/rain we’ve had….but it’s fine. They’ve even helped motivate me to go out and run on my lunch break a few days last week.
Wednesday, I talked Farmer Ben into meeting me for a lunch run (on his day off), even though it was so cold that my face hurt and we could barely breathe! We only ended up doing a little over two miles but it was well worth it.
As we started running, he looked over at me and said, “Noelle, you are my ONLY motivation for being out here right now.”
That comment had me smiling for the rest of the run and the rest of the day!
I know he was trying to be funny… but, seriously? Swoon! I love that guy!
It got me thinking about what my motivation is. I’ve discussed this before, so I won’t go into great detail, but I’d love to hear what motivates you…especially on your “I don’t want to do this!” days.
So, let’s discuss, what is YOUR motivation for getting out and running…even when it’s so cold that it makes your face hurt?
“A List for Last Year,” A FINAL Update on 2013.

Noelle’s (Re-Re-Updated) List of Things to do before December 31, 2013:
1. Create a logo for the blog and go self-hosted.
Fail. That’s all.
2. Excel in my job.
I think for the most part, I do my job pretty darn well, but I’m still learning a lot… so I’ll call this one about 85%…..
3. Make 2013 a “Yes!” year/7. Be more present.
Yes. I killed this one.
5. Take more time to read.
Again, killed it.
4. Run a half marathon/6. Run 26.2 miles.
Half Marathon-I still haven’t raced it…but I’ve run it.
Marathon-Done. So we’ll call this even.
8. Pay off at least one big bill–Get better about saving money.
Didn’t happen… 2013 was the year of random things that come up and shot our budget to Hades AND realizing that we really need an emergency fund.
2014 will be the year of actually having an emergency fund (We’re 75% of the way to our EF goal!) and being able to handle those budget killers.
On the plus side, I upped my 401k contribution and Farmer Ben started his retirement fund at work in 2013…so it wasn’t all bad!
9. Do 100 Burpees in a row.
Nope…. I can probably do about 30 without stopping…maybe 40 if I am feeling like a boss.
10. Do more food-ing.
Absolutely! Done.
Told you that it would be short and sweet… I’d say I did well… granted, I failed miserably at two of my goals…but I definitely learned something from most of these challenges. And of the few that I didn’t accomplish, we are better prepared for them this year.
2013 was a good year, but 2014 will be better… I’ve got big plans for this year and can’t wait to fill you in along the way!

Noelle’s (Re-Updated) List of Things to do before December 31, 2013:
1. Create a logo for the blog and go self-hosted.
Not gonna lie, STILL haven’t done this… however, I have gotten some ambassadorships that are pretty awesome and feel like I’m moving in the right direction. (you guys get 25% with my code for Energy Bits!)
I also finally broke down and got Twitter and Instagram… not that I know how to use them very well, but it’s all about networking, right? (usernames for both are NoellesNotebook if you’d like to give a follow!)
I’d love to know what you, readers, would like to see content wise…I realize that this space has morphed into a different animal from what I originally intended it to be… but I’m okay with that… however, I want to keep it interesting for all of you…so I’d love your feedback!
2. Excel in my job.
Confession: I struggle with this one.
I feel like my “promotion” has transformed into something else… my time is filled up with special projects that seem to take over what I’m actually supposed to be doing. And honestly, I have days (or months) where I just wonder how I am supposed to get everything done… Does anyone else have this problem?
My boss tells me I’m doing well, but some days, I really have trouble believing that….but I just keep on going and I’m hoping that counts for something.
To be completely honest, I’ve been doing a lot of thinking on this particular aspect of my life, what’s to come of it, and what not.
3. Make 2013 a “Yes!” year/7. Be more present.
I’m killing this one.
- Strides for James was amazing–we had over 200 participants and raised over $5,000 after expenses. We were able to reach our scholarship goal in less than a year and someone in our community is already benefitting from our group’s hard work.
- Farmer Ben won tickets to a Red Sox game. We went and loved it.
- The Hubby and I were in the bridal party/catered our friends’ wedding. Not gonna lie, it was exhausting but worth it.
- We got to do some hiking this summer! I cannot tell you how happy this made me!
- Just starting a new online class today.
- Farmer Ben and I just returned from a kick-ass road-trip and are craving more adventures. We drove to St. Simons Island, Georgia, then headed up to Charleston, South Carolina. I am ready to move there!
- On our road-trip, we ate Barbecue for 3 days. I’m not even a little ashamed.
- Ben finally got to meet my good friend Natasha who lives in DC and we visited (and by visited, I mean had a couple of drinks and crashed on her floor before getting up ridiculously early and hitting the road again) Liz–FINALLY! I even got to show him my old apartment.
- Also on our trip, we spent the night on a sail boat-a first for me!
- I also ran my first marathon.
- Spent more time with family
I think those are all of the big ones, but honestly, I feel so blessed this year with all of the adventures we’ve had and I am wondering what’s next!
As far as spending less time on my phone, I’ve absolutely cut down on this. I deactivated my Facebook account and haven’t looked back. I may re-activate it when I get back into the heart of planning Strides for James 2014… but for now, I am content to be in the dark about what that girl who was in my gen ed class, freshman year is doing. I’m learning to appreciate those around me and treasuring the time with people I don’t see every day.
Any suggestions to continue my “Yes” Year?!
5. Take more time to read.
Yes. Doing this.
I won’t bore with the entire list, but these are my favorites I’ve read this year (Not gonna lie, it looks almost exactly like the list in my last update):

Half Marathon-I’ve run the distance but haven’t raced it. Can we call this one even? I may look for a race in the next month or two… just to check it off the list, but I won’t be heartbroken if I don’t get that race in.
Marathon-Done. One of the most difficult and worthwhile things I have ever accomplished… and I’m already planning to do another!

Absolutely!
I definitely went on a vegan recipe kick after reading Eat & Run. I’ve also been experimenting more with using different ingredients, especially when I was training for the marathon, I had to get creative with pre/during race foods because of some digestion issues.
We’ve also made an effort to eat at home more this year…and when we traveling, we try to eat at a local restaurant.

Roasted beets, cukes, lettuce, beet greens, tomatoes, carrots and homemade horseradish avocado dressing.
So, there you have it. I’d say for the most part, I’m doing pretty well…I definitely see areas where I can improve, but I am happy for now.

Life (mostly Food) Update In Photos…

I know… I have so much to catch up on in the blogging aspect of things. This weekend was Strides for James and it was so much fun! I’ll be doing a post that details a little bit of everything… but I honestly haven’t had a moment to sit and collect my thoughts. So, to keep you until then, it was awesome. Our first year was a success.
So, I’ve been taking a lot of random pictures on my phone lately. Mostly of food and some other things…but mostly food.
So here’s a look at what I’ve been eating and doing lately.
I have a serious weakness for scallops…and margaritas.
I’m seeing a food theme here…

Crock-pot Mexican chicken over rice with avocados, sour cream and NY Cheddar.. Yum.
This is what happens when you are planning a fun run and go to the grocery store at 6:00 am…you leave with two cases of free bananas and one discounted case.
After the race…we had a lot of leftover bananas…so I’ve baking a ton of banana bread (gluten-free–recipes coming!) and making things like this (sorry the picture isn’t great)…
Speaking of baking banana bread, I was checking to see if one of the loaves was done…and stupidly burnt the tip of my finger, through a towel. Only me…
I’m also happy to report, after taking home about a half case of bananas, we are down to seven. Farmer Ben and I are a great team in the kitchen!
A mid-week run past a neighbor’s house… somehow we came home with two dozen eggs!
Another sunny day was spent out working in the garden (a week later, it went down to 28 at night… gah!)
